Ingredients Of OK Nihari Masala:

  1. Clove
  2. Green Cardamom
  3. Black Cardamom
  4. Coriander Seeds
  5. Fennel Seeds
  6. Salt
  7. Cumin white
  8. Star Anise
  9. Red Chilli
  10. Will Cayenne Pepper
  11. Turmeric
  12. Carom
  13. Dried Ginger
  14. Black Salt
  15. Nutmeg
  16. Mace
  17. Bay Leaf

Ingredients Required:

Ingredients Quantity
Meat 1 kg
Bones 1 kg knuckle & marrow
Onion 1 medium sliced
Flour 1 cup roasted (dissolve in 2 cup water)
Ginger Garlic Paste 1 tbsp
Ginger Julienne Cut 1/4 cup
Fresh Coriander Leaves 1 cup chopped
Cooking Oil 1 cup



  1. Heat oil, stir fry meat and bones with ginger garlic paste on high heat for a few minutes, add OK Nihari Masala. Stir fry until oil separates from masala.
  2. Add 10 cups of water. Stir and bring to boil. Lower the heat to medium and let it cooked for six to seven hours.
  3. Gradually add dissolved flour in the gravy. Stir and mix. Bring to boil and cook for 15 minutes. Stir occasionally.
  4. Heat remaining oil and add sliced onion. Stir fry until golden and pour into Nihari. Cover and simmer for 10 minutes on low heat.
  5. Garnish with chopped green chillies, julienne ginger, fresh coriander and lemon.
